Ingredients
  

  • 2 pieces English muffins Split in half.
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked breakfast sausage or bacon Chopped.
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika Optional.
  • ¼ cup diced bell peppers or mushrooms Optional for extra flavor and nutrition.
  • fresh as needed parsley or chives Optional for garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Split the English muffins in half and place them cut-side up on a baking sheet.
  • Toast the English muffins in the toaster or place them in the oven for about 5 minutes until lightly golden.
  • In a mixing bowl, whisk together the eggs, salt, black pepper, and paprika until well combined.
  • In a skillet, scramble the eggs over medium heat until nearly set, about 3-4 minutes. Remove from heat and leave slightly soft as they will continue to cook in the oven.
  • Distribute the cooked breakfast sausage or bacon evenly over the toasted English muffin halves.
  • Spoon scrambled eggs on top of the meat, ensuring each half is well-filled.
  • Sprinkle shredded mozzarella cheese evenly over each muffin half.
  • Optional: Add diced bell peppers or mushrooms on top for extra flavor and nutrition.
  • Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a minute. Garnish with fresh parsley or chives if desired.
