Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 cups broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium red onion, cut into wedges
  • 1 cup fresh pineapple chunks
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon sesame oil
  • to taste salt and pepper
  • 1 tablespoon green onions, chopped (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, whisk together soy sauce, honey, minced garlic, minced ginger, sesame oil, salt, and pepper to create the marinade.
  • Place the chicken thighs in the bowl with the marinade and let them soak for about 10 minutes while you prepare the vegetables.
  • On a large sheet pan, arrange the broccoli, bell peppers, red onion, and pineapple chunks. Drizzle a little olive oil, salt, and pepper over the vegetables and toss to coat them lightly.
  • Remove the chicken from the marinade and place it on the sheet pan among the vegetables. Pour the remaining marinade over everything on the sheet pan.
  • Bake in the preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender and caramelized.
  • Once cooked, remove the sheet pan from the oven and let it rest for a few minutes. Garnish with chopped green onions and sesame seeds if desired.
  • Serve the chicken and vegetables warm, enjoying the vibrant flavors of Hawaiian cuisine.

Notes

Feel free to substitute any favorite vegetables or proteins.
You can use chicken breasts if you prefer a leaner option, but thighs are juicier and more flavorful.
