Ingredients
  

  • 1 cup cottage cheese 8 ounces
  • 3 large eggs
  • ¼ teaspoon cream of tartar
  • ½ teaspoon garlic powder optional
  • ¼ teaspoon salt
  • ½ teaspoon baking powder optional

Instructions
 

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cottage cheese and eggs. Use an electric mixer or whisk to blend until smooth.
  • In a separate bowl, add the cream of tartar, garlic powder (if using), salt, and baking powder (if using). Mix lightly.
  • Gently fold the dry mixture into the cottage cheese mixture until just combined. Be careful not to overmix.
  • Using a spatula, scoop the mixture onto the prepared baking sheet, forming 8 equal rounds (about 2-3 inches in diameter).
  • Bake in the preheated oven for 25 minutes, or until the tops are golden and slightly firm to the touch.
  • Remove from oven and allow the cloud bread to cool slightly before transferring to a wire rack.
  • Store any leftover cloud bread in an airtight container in the refrigerator for up to a week.
