- 2 tablespoons unsalted butter
- 3 large yellow onions, thinly sliced (about 1.5 pounds)
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 2 bay leaves
- 6 cups vegetable broth or beef broth
- 1 cup Arborio rice (or long-grain rice)
- 1 cup shredded Gruyère cheese (or Swiss cheese)

- black pepper to taste
- fresh parsley for garnish (optional)
In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Once melted, add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 20 minutes until the onions are caramelized and golden brown.
Add the minced garlic, thyme, and bay leaves to the pot. Cook for an additional 2 minutes until fragrant.
Pour in the vegetable or beef broth, and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
Add the Arborio rice to the pot, stirring well to combine. Season with additional salt and black pepper to taste. Cover the pot and let it simmer for about 15-18 minutes, or until the rice is tender and has absorbed most of the broth. Stir occasionally to prevent sticking.
Once done, remove the bay leaves, and adjust the seasoning if necessary.
Serve the rice hot in bowls, and top each serving with shredded Gruyère cheese. If desired, place the bowls under a broiler for 1-2 minutes to melt and lightly brown the cheese.
