Ingredients
  

  • 4 medium-sized potatoes About 2 pounds, peeled and thinly sliced.
  • 2 medium onions Thinly sliced.
  • 4 tablespoons vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder Optional.
  • to taste fresh parsley For garnish, optional.

Instructions
 

  • Begin by peeling the potatoes and slicing them thinly, about ⅛ inch thick. Rinse in cold water to remove excess starch, then drain.
  • Heat the vegetable oil in a large skillet over medium heat. Make sure the oil is hot but not smoking.
  • Add the sliced potatoes to the skillet in a single layer. Sprinkle with salt and pepper. Cook for about 10 minutes, turning occasionally to ensure even browning.
  • While the potatoes are cooking, slice the onions.
  • Once the potatoes are slightly golden and tender, add the sliced onions to the skillet. If using, sprinkle the garlic powder over the mixture.
  • Continue cooking for an additional 10 minutes, stirring occasionally, until the onions are soft and caramelized, and the potatoes are crispy.
  • Taste and adjust seasoning as necessary.
  • Remove from heat and garnish with fresh parsley, if desired. Serve hot.

Notes

For extra flavor, consider adding sliced bell peppers or seasoning with paprika.
Ensure the oil is hot enough before adding potatoes to achieve the desired crispiness.
