Garlic Butter Steak Bites and Potatoes

Ingredients
  

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1 pound baby potatoes, halved
  • ¼ cup unsalted butter
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped or 1 teaspoon dried
  • 2 teaspoons fresh thyme, chopped or 1 teaspoon dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions
 

  • Place the halved baby potatoes in a pot and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Once boiling, reduce heat and simmer for about 10 minutes, or until fork-tender. Drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the cubed steak to the skillet in a single layer. Season with salt and pepper. Cook for 3-4 minutes, flipping occasionally, until browned and cooked to your liking. Remove from skillet and set aside.
  • In the same skillet, lower the heat to medium. Add the butter and allow it to melt, then add the minced garlic, rosemary, and thyme. Simmer for about 1-2 minutes, until the garlic is fragrant but not burnt.
  • Return the steak bites to the skillet with the garlic butter. Add the cooked potatoes and toss everything together until well coated in the garlic butter.
  • Transfer the garlic butter steak bites and potatoes to a serving plate. Optionally, garnish with extra fresh herbs or a sprinkle of salt.

Notes

For extra flavor, you can marinate the steak bites in garlic and herbs for 30 minutes before cooking.
Feel free to substitute the baby potatoes with other types of potatoes, such as Yukon Gold or red potatoes.
Adjust the seasoning to your preference; adding a pinch of red pepper flakes can give it a nice kick!
