- 12 oz spaghetti or linguine
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 16 oz mushrooms, sliced (such as cremini or button mushrooms)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup vegetable broth or white wine
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ cup fresh parsley, chopped (for garnish)
Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta in a colander.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add the sliced mushrooms to the skillet and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.
Pour in the vegetable broth (or white wine) and cook for an additional 2-3 minutes, allowing the liquid to reduce slightly.
Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Mix well until the cheese is melted and the sauce is smooth. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
Add the drained pasta to the skillet and toss to coat with the sauce. Cook for another 1-2 minutes until heated through.

For a vegetarian version, feel free to add additional vegetables like spinach or cherry tomatoes.
You can swap out heavy cream for a lighter option such as half-and-half or milk, but the sauce will be less rich.
