Preheat the oven to 400°F (200°C).
In a mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper.
Add the chicken breasts to the bowl and coat them well with the olive oil mixture. Make sure they are evenly covered.
Arrange the chicken breasts in the center of a baking dish or sheet pan.
In the same bowl, toss the potato wedges with any remaining olive oil mixture until well coated.
Place the potato wedges around the chicken in the baking dish.
Sprinkle grated Parmesan cheese evenly over the chicken and potatoes.
Bake in the preheated oven for about 30-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
Once cooked, remove from the oven and let it rest for 5 minutes.
Garnish with freshly chopped parsley before serving.
