Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
  • 4 pieces medium-sized potatoes Cut into wedges, about 1.5 pounds.
  • ¼ cup olive oil
  • 4 cloves garlic Minced.
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • to taste fresh parsley Chopped, for garnish.

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  • Add the chicken breasts to the bowl and coat them well with the olive oil mixture. Make sure they are evenly covered.
  • Arrange the chicken breasts in the center of a baking dish or sheet pan.
  • In the same bowl, toss the potato wedges with any remaining olive oil mixture until well coated.
  • Place the potato wedges around the chicken in the baking dish.
  • Sprinkle grated Parmesan cheese evenly over the chicken and potatoes.
  • Bake in the preheated oven for about 30-40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  • Once cooked, remove from the oven and let it rest for 5 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

You can substitute the potatoes with other root vegetables like carrots or sweet potatoes if desired.
For a crispy finish, you may broil the dish for the last 2-3 minutes of cooking.
Ensure the chicken is uniformly sized for even cooking.
