- 1 pound ground beef
- 8 ounces egg noodles
- 1 cup beef broth
- ½ cup onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots or mixed vegetables
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning

- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped optional, for garnish
In a pot, bring salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion is translucent.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 5-6 minutes until browned and cooked through.
Stir in the beef broth, Worcestershire sauce, frozen peas and carrots, Italian seasoning, salt, and pepper. Bring the mixture to a simmer and let it cook for 5 minutes.
Add the cooked noodles to the skillet, tossing to combine everything evenly. Cook for an additional 2-3 minutes until heated through.
Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
You can substitute ground turkey or chicken for a lighter option.
