Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • 8 pieces taco shells or small tortillas
  • 1 cup salsa
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • ¼ cup sour cream Optional for serving
  • sliced jalapeños Optional for serving

Instructions
 

  • Heat a skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break it up with a spoon as it cooks.
  • Drain excess fat if necessary, then add the diced onion, minced garlic, and bell pepper to the skillet. Sauté until the vegetables are softened, about 3-4 minutes.
  • Stir in the taco seasoning, black beans, and corn. Cook for an additional 3-4 minutes, allowing flavors to blend and everything is heated through.
  • While the beef mixture is cooking, warm the taco shells or tortillas according to package instructions.
  • Assemble the tacos by spooning the beef mixture into each taco shell. Top with salsa, shredded cheese, lettuce, and diced tomatoes.
  • Serve immediately with optional sour cream and jalapeños on the side.

Notes

You can customize these tacos with your favorite toppings, such as avocado, cilantro, or hot sauce.
