Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups beef broth Consider using homemade for richer flavor.
  • 1 cup egg noodles
  • 1 14.5-ounce can diced tomatoes with juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley Optional.

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  • Add chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally until the vegetables begin to soften.
  • Pour in the beef broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to a simmer, then add the egg noodles, diced tomatoes (including juice), Worcestershire sauce, Italian seasoning, salt, and pepper.
  • Simmer for about 15 minutes, or until the noodles are cooked and the vegetables are tender.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with fresh parsley if desired.

Notes

You can customize this soup by adding other vegetables such as bell peppers or peas.
For a richer flavor, consider using homemade beef broth if available.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave.
