- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups beef broth Consider using homemade for richer flavor.
- 1 cup egg noodles
- 1 14.5-ounce can diced tomatoes with juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- to taste salt
- to taste pepper
- for garnish fresh parsley Optional.
In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
Add chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally until the vegetables begin to soften.
Pour in the beef broth and bring the mixture to a boil.
Once boiling, reduce the heat to a simmer, then add the egg noodles, diced tomatoes (including juice), Worcestershire sauce, Italian seasoning, salt, and pepper.
Simmer for about 15 minutes, or until the noodles are cooked and the vegetables are tender.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh parsley if desired.
You can customize this soup by adding other vegetables such as bell peppers or peas.
For a richer flavor, consider using homemade beef broth if available.
