Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream together 1 cup butter, 1 cup peanut butter, brown sugar, and granulated sugar until light and fluffy.
Add in eggs and vanilla extract, beating until well combined.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Gradually mix the dry ingredients into the wet ingredients until fully incorporated.
Scoop dough and form into small oval shapes. Use a fork to create ridges on top to mimic classic nutter butter shape.
Bake for 8-10 minutes, then remove and allow to cool completely.
For the filling, beat together remaining ½ cup butter, ½ cup peanut butter, and powdered sugar until smooth.
Spread filling onto one cookie and sandwich with another. Repeat until all cookies are filled.

Cookies can be stored in an airtight container for up to 5 days or frozen for later enjoyment.
