1 skillet or frying pan
1 colander
1 cutting board
- 12 oz pasta e.g., penne, fettuccine
- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1 bell pepper any color, sliced
- 1 small onion diced
- 3 cloves garlic minced
- ¼ cup honey
- 2 tablespoons soy sauce
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes optional
- to taste salt
- for garnish Fresh parsley or basil optional
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, cut the chicken breast into bite-sized pieces. Season with salt and black pepper.
In a skillet over medium heat, heat the olive oil. Add the chicken pieces and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell pepper and diced onion. Sauté for 3-4 minutes until soft. Add the minced garlic and red pepper flakes (if using) and cook for an additional minute.
In the skillet, add the honey and soy sauce, stirring well to combine. Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for 2-3 minutes until heated through.
Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning with salt and additional pepper, if desired.
Plate the pasta mixture and garnish with fresh parsley or basil if using.
Feel free to customize the vegetables based on your preference, such as adding broccoli or snap peas.
For a creamier texture, stir in a splash of cream or a dollop of cream cheese before serving.
