Ingredients
  

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 cup jasmine rice or rice of your choice
  • 2 cups water
  • 4 tablespoons hot honey plus extra for drizzling
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup bell pepper, sliced
  • ½ cup green onions, chopped for garnish
  • to taste sesame seeds optional, for garnish

Instructions
 

  • In a medium pot or rice cooker, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil, then reduce to low heat and let simmer for about 15-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
  • In a large mixing bowl, combine the pieces of chicken with garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is evenly coated.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  • Once the chicken is cooked, drizzle in the hot honey and soy sauce. Stir well to coat the chicken in the sauce, and let it cook for another 2-3 minutes until the sauce is slightly thickened.
  • In the last few minutes of cooking, add the broccoli florets and bell pepper to the skillet. Stir to combine and cook until the veggies are tender, about 3-5 minutes.
  • To assemble the bowls, divide the cooked rice into four bowls. Top with the hot honey chicken and vegetable mixture. Drizzle with extra hot honey if desired and sprinkle with chopped green onions and sesame seeds.

Notes

Feel free to customize the vegetables based on your preference or what's in season.
To make this dish even spicier, add a pinch of red pepper flakes to the chicken seasoning.
