In a medium pot or rice cooker, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil, then reduce to low heat and let simmer for about 15-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
In a large mixing bowl, combine the pieces of chicken with garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is evenly coated.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
