Ingredients
  

  • 12 oz bow tie pasta
  • 1 lb Italian sausage mild or spicy, your choice
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes optional
  • to taste none salt and pepper
  • to garnish none fresh basil or parsley
  • to serve none grated Parmesan cheese

Instructions
 

  • Cook the bow tie pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Add the minced garlic to the skillet and cook for an additional 1 minute, being careful not to burn it.
  • Remove the casing from the Italian sausage and add the sausage meat to the skillet. Break it up with a wooden spoon and cook until browned, about 5-7 minutes.
  • Stir in the diced tomatoes (with juice), Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer and cook for another 5-7 minutes.
  • Combine the cooked bow tie pasta with the sausage mixture in the skillet, tossing everything together to evenly coat the pasta.
  • Remove from heat and serve immediately, garnished with fresh basil or parsley and a sprinkle of grated Parmesan cheese.

Notes

For a healthier option, you can use turkey or chicken sausage instead of pork sausage.
Feel free to add vegetables such as bell peppers or spinach for added nutrition and flavor.
This dish can be prepared ahead of time and reheated; it often tastes even better the next day.
