While the burgers are cooking, whisk together the mayonnaise, sugar-free ketchup, and yellow mustard in a small bowl to create the special sauce.
To assemble the burgers, place each patty on a lettuce leaf. Add diced pickles and drizzle the special sauce over the top. If using, add optional toppings like sliced tomatoes or bacon.
Wrap the lettuce leaves around the patties and secure with a toothpick if necessary. Serve immediately.
