Ingredients
  

  • 1 lb ground beef (80/20 blend) Ensure to use a high-fat content for juiciness.
  • ½ cup shredded cheddar cheese
  • ½ cup mayonnaise
  • ¼ cup sugar-free ketchup
  • 2 tablespoons yellow mustard
  • ¼ cup diced pickles
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • 4 large romaine lettuce leaves For wrapping the burgers.
  • Optional toppings sliced tomatoes, bacon, and additional pickles.

Instructions
 

  • Preheat your skillet or griddle over medium-high heat.
  • In a mixing bowl, combine the ground beef with onion powder, garlic powder, salt, and pepper. Mix well but do not overwork the meat.
  • Divide the beef mixture into 4 equal portions and roll each into a ball.
  • Once the skillet is hot, place one meatball on the skillet and immediately smash it down with the spatula to form a thin patty. Repeat for the remaining meatballs.
  • Cook the burgers for about 3 minutes or until a crust forms on the bottom. Flip the burgers and top each with shredded cheddar cheese. Cook for an additional 2 minutes or until the cheese is melted and the burgers are cooked to your desired doneness.
  • While the burgers are cooking, whisk together the mayonnaise, sugar-free ketchup, and yellow mustard in a small bowl to create the special sauce.
  • To assemble the burgers, place each patty on a lettuce leaf. Add diced pickles and drizzle the special sauce over the top. If using, add optional toppings like sliced tomatoes or bacon.
  • Wrap the lettuce leaves around the patties and secure with a toothpick if necessary. Serve immediately.

Ensure to use a high-fat content ground beef (80/20) for juiciness.
You can customize your toppings based on personal preference while keeping them low-carb.
For an extra flavor boost, consider adding some sautéed mushrooms or jalapeños as toppings.
