Ingredients
  

  • 1.5 lbs ground beef
  • ½ cup almond flour
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic (minced) Adjust based on garlic flavor preference.
  • ¼ cup fresh parsley (chopped)
  • 1 large egg
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup butter
  • ½ cup beef broth

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the ground beef, almond flour, grated Parmesan cheese, minced garlic, chopped parsley, egg, salt, and black pepper. Mix until all ingredients are well incorporated.
  • Shape the mixture into meatballs, approximately 1.5 inches in diameter. You should have about 20 meatballs.
  • Line a baking sheet with parchment paper and place the meatballs on top, spaced evenly apart.
  • Bake the meatballs in the preheated oven for about 20 minutes, or until they reach an internal temperature of 160°F (70°C).
  • While the meatballs are baking, prepare the garlic butter. In a skillet over medium heat, melt the butter until bubbling. Add any remaining minced garlic and sauté for 1-2 minutes until fragrant.
  • Once the meatballs are done, transfer them to the skillet with the garlic butter. Pour the beef broth into the pan and gently toss the meatballs to coat them in the butter sauce. Cook for an additional 3-5 minutes.
  • Serve immediately, garnished with more chopped parsley if desired.

Notes

These meatballs can also be served with a low-carb dipping sauce or on top of zoodles (zucchini noodles) for a complete meal.
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
You can adjust the number of garlic cloves based on your preference for garlic flavor.
