Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 28 ounces crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional) Optional ingredient for heat.
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • to taste none salt and pepper Season to taste.

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute.
  • Add the ground beef or Italian sausage to the pot. Cook until browned, breaking it apart with a wooden spoon, about 6-7 minutes. Drain excess fat if necessary.
  • Stir in the crushed tomatoes, chicken or vegetable broth, dried basil, oregano, and red pepper flakes if using. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to a simmer. Add the broken lasagna noodles and cook for about 10-12 minutes, or until the noodles are tender.
  • In a separate bowl, mix together the ricotta, shredded mozzarella, and grated Parmesan cheese.
  • Serve the soup in bowls, adding a dollop of the cheese mixture on top of each serving. Garnish with fresh basil or parsley if desired.

Notes

You can substitute ground turkey or chicken for a lighter option.
Feel free to add vegetables like bell peppers or spinach for added nutrition.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove.
