- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 28 ounces crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional) Optional ingredient for heat.
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute.
Add the ground beef or Italian sausage to the pot. Cook until browned, breaking it apart with a wooden spoon, about 6-7 minutes. Drain excess fat if necessary.
Stir in the crushed tomatoes, chicken or vegetable broth, dried basil, oregano, and red pepper flakes if using. Season with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat to a simmer. Add the broken lasagna noodles and cook for about 10-12 minutes, or until the noodles are tender.
In a separate bowl, mix together the ricotta, shredded mozzarella, and grated Parmesan cheese.
Serve the soup in bowls, adding a dollop of the cheese mixture on top of each serving. Garnish with fresh basil or parsley if desired.
You can substitute ground turkey or chicken for a lighter option.
Feel free to add vegetables like bell peppers or spinach for added nutrition.
