- 1 lemon zest Zest of 1 lemon.
- 2 cloves garlic Minced.
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- as needed serving lemon wedges For serving.
Preheat the oven to 400°F (200°C).
In a small saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in the lemon juice, lemon zest, minced garlic, dried parsley, salt, and pepper.
Place the cod fillets in the baking dish and pour the lemon butter mixture evenly over the top.
Bake the cod in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.
Once baked, remove from the oven. Serve the cod with fresh lemon wedges on the side.
For a different flavor profile, feel free to add some capers or a pinch of red pepper flakes to the butter sauce for added kick.
This dish pairs well with steamed vegetables or a side salad for a complete meal.
Ensure the cod is fresh and properly thawed if using frozen fillets for the best results.
