Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • as needed lemon wedges for serving

Instructions
 

  • Cut the boneless, skinless chicken breasts into 1-inch cubes and set aside.
  • In a mixing bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped parsley, chopped oregano, salt, and black pepper until well combined.
  • Add the chicken cubes to the marinade. Stir to ensure all pieces are evenly coated. Cover and refrigerate for at least 15 minutes (or up to 2 hours for better flavor).
  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Preheat the grill or grill pan over medium-high heat.
  • Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  • Place the skewers on the hot grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks (internal temperature should reach 165°F or 74°C).
  • Remove the skewers from the grill and let them rest for a few minutes.
  • Serve the Lemon Herb Chicken Skewers with lemon wedges on the side for extra flavor.

Notes

For added flavor, you can marinate the chicken overnight.
Feel free to add bell peppers, onions, or cherry tomatoes to the skewers for a colorful presentation.
These skewers can be served with a side of rice, salad, or pita bread for a complete meal.
