Ingredients
  

  • 12 oz fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 1 lb chicken breast, cut into bite-sized pieces Can substitute with chicken thighs for a moister option.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream For a lighter version, use half-and-half instead.
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes Optional for heat.
  • 1 cup grated Parmesan cheese
  • Fresh to taste basil for garnish

Instructions
 

  • Start by cooking the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook for about 6-7 minutes until golden brown and cooked through.
  • Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring it to a simmer.
  • Lower the heat and add the heavy cream, sun-dried tomatoes, oregano, and red pepper flakes (if using). Stir to combine and let it simmer for about 5 minutes until the sauce thickens slightly.
  • Add the cooked pasta to the skillet and toss to coat all the pasta in the creamy sauce.
  • Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning if needed.
  • Serve the Marry Me Chicken Pasta warm, garnished with fresh basil.

Notes
