Ingredients
  

  • 16 oz penne pasta
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts
  • to taste salt and pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 cup grated Parmesan cheese
  • for garnish fresh basil leaves

Instructions
 

  • Begin by cooking the penne pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • While the pasta cooks, heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides, then add them to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and let it rest before slicing.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
  • Pour in the chicken broth and scrape any bits off the bottom of the skillet. Let it simmer for 2-3 minutes.
  • Reduce the heat to low, then stir in the heavy cream, chopped sun-dried tomatoes, and dried Italian herbs. Allow the mixture to heat through for about 5 minutes.
  • Add the grated Parmesan cheese to the sauce and stir until melted and smooth. Season with additional salt and pepper, if needed.
  • Slice the cooked chicken into strips and return it to the skillet with the sauce. Add the cooked penne pasta and toss everything together until well combined.
  • Serve hot, garnished with fresh basil leaves.

Notes

This dish can be customized with your choice of vegetables; spinach or mushrooms would work well. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of broth if needed to prevent drying out.
