Ingredients
  

  • 2 cups rice cereal
  • 1 cup smooth peanut butter
  • ½ cup honey or maple syrup
  • ½ cup chocolate chips
  • ¼ cup shredded coconut optional
  • ¼ cup chopped nuts optional

Instructions
 

  • Line a 9x9 inch baking dish with parchment paper, leaving some overhang for easy removal.
  • In a mixing bowl, combine smooth peanut butter and honey (or maple syrup). Mix until smooth and well combined.
  • Fold in the rice cereal gently with a rubber spatula until all the cereal is coated with the peanut butter mixture.
  • Fold in shredded coconut and chopped nuts, if using, until evenly distributed.
  • Pour the mixture into the prepared baking dish and press it down firmly into an even layer.
  • Melt the chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between, until smooth.
  • Pour the melted chocolate over the pressed mixture and spread it evenly using a spatula.
  • Refrigerate the baking dish for at least 2 hours to allow the bars to set.
  • Once set, lift the bars out of the dish using the parchment overhang and cut into 12 squares.

Notes

Feel free to customize the recipe by adding different mix-ins, such as dried fruit or seeds.
It’s important to press the mixture down firmly to ensure the bars hold together once cut.
Store the crunch bars in an airtight container in the fridge for up to one week.
