Ingredients
  

  • 12 oz Cajun sausage (e.g. Andouille or smoked sausage), sliced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup green onions, chopped (for garnish)

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced sausage to the skillet and cook for about 5 minutes until browned, stirring occasionally for even cooking.
  • Add the diced onion, red bell pepper, and green bell pepper to the skillet and cook for another 5 minutes until the vegetables are softened.
  • Stir in the minced garlic, paprika, Cajun seasoning, and black pepper, and cook for 1 minute until fragrant.
  • Add the uncooked rice to the skillet and stir until the rice is well-coated with the sausage and vegetables.
  • Pour in the chicken broth and season with salt as desired. Bring to a boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  • Remove from heat and fluff the rice with a fork. Garnish with chopped green onions before serving.

Notes

You can substitute the sausage with chicken or shrimp for a different variation.
Consider adding other vegetables like corn or peas for extra nutrition.
