  • 2 Chicken breasts boneless, skinless, cut into bite-sized pieces
  • 1 tablespoon Olive oil
  • 1 Zucchini sliced
  • 1 Red bell pepper sliced
  • 1 Yellow bell pepper sliced
  • ½ cup Red onion sliced
  • 1 teaspoon Garlic powder
  • ½ teaspoon Paprika
  • ¼ teaspoon Dried thyme
  • ¼ teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken pieces, season with salt, pepper, and garlic powder. Cook for 5-6 minutes until browned.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add zucchini, bell peppers, and red onion. Sauté for 5 minutes until slightly softened.
  • Add paprika, thyme, and oregano. Stir to combine.
  • Return chicken to skillet and toss everything together.
  • Cook for an additional 2-3 minutes until chicken is fully cooked and vegetables are tender.
  • Serve hot and enjoy!
