Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced About 4 breasts.
  • to taste salt
  • to taste pepper
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 14.5 oz can diced tomatoes, with juices
  • 4 cups chicken broth
  • 12 ounces penne pasta
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • fresh basil leaves for garnish Optional.

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  • Stir in the minced garlic and Italian seasoning, and cook for an additional 1-2 minutes until fragrant.
  • Add the diced tomatoes (with juices) and chicken broth to the pot. Stir well to combine.
  • Bring the mixture to a boil, then add the penne pasta. Reduce the heat to a simmer and cook uncovered for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  • Stir in the grated Parmesan cheese and half of the mozzarella cheese until melted and creamy.
  • Top the pasta with the remaining mozzarella cheese and cover the pot. Allow it to sit for about 2-3 minutes until the cheese is melted.
  • Garnish with fresh basil leaves if desired before serving.

Notes

You can substitute chicken thighs for a richer flavor or use pre-cooked chicken to simplify the process.
Feel free to add in vegetables such as spinach or mushrooms for extra nutrition.
If you prefer a spicier dish, consider adding red pepper flakes to taste.
