- 4 cups beef broth
- 2 cups elbow macaroni

Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Add the diced onion, minced garlic, and diced bell pepper to the pot. Sauté for 3-4 minutes until vegetables are softened.
Pour in the beef broth and bring to a boil. Stir in the elbow macaroni and Italian seasoning. Reduce heat to medium-low and let it simmer uncovered for about 10-12 minutes, or until the macaroni is al dente.
Add the milk and shredded cheddar cheese to the pot, stirring until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
Serve hot, garnished with chopped green onions and additional cheese if desired.
For a spicier version, consider adding diced jalapeños or a dash of hot sauce.
Feel free to substitute ground turkey or chicken for a lighter option.
This soup is best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Reheat gently on the stove.
