Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced bell pepper, diced (any color)
  • 4 cups beef broth
  • 2 cups elbow macaroni
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • optional toppings chopped green onions, additional cheese

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion, minced garlic, and diced bell pepper to the pot. Sauté for 3-4 minutes until vegetables are softened.
  • Pour in the beef broth and bring to a boil. Stir in the elbow macaroni and Italian seasoning. Reduce heat to medium-low and let it simmer uncovered for about 10-12 minutes, or until the macaroni is al dente.
  • Add the milk and shredded cheddar cheese to the pot, stirring until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions and additional cheese if desired.

Notes

For a spicier version, consider adding diced jalapeños or a dash of hot sauce.
Feel free to substitute ground turkey or chicken for a lighter option.
This soup is best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Reheat gently on the stove.
