Ingredients
  

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional)
  • to taste optional fresh herbs for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Mix well to form a seasoning paste.
  • Pat the chicken thighs dry with paper towels to help the skin crisp up while baking.
  • Rub the seasoning paste all over the chicken thighs, making sure to get under the skin for maximum flavor.
  • Place the chicken thighs in a baking dish or on a baking tray. If using, drizzle lemon juice over the chicken.
  • Bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
  • Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

You can substitute chicken breasts for thighs, but adjust the cooking time since breasts typically cook faster.
For extra flavor, consider marinating the chicken in the seasoning for a few hours or overnight.
Serve with side dishes like roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
