Ingredients
  

  • 12 oz spaghetti or linguine
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • Zest of 2 lemons
  • Juice of 2 lemons (about ½ cup or 120ml)
  • ½ teaspoon red pepper flakes optional
  • 1 cup fresh parsley, chopped
  • 1 cup grated Parmesan cheese
  • to taste Salt and pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta in a colander.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the lemon zest and juice to the skillet, followed by the red pepper flakes. Stir well and let the mixture simmer for about 2 minutes.
  • Add the drained pasta to the skillet and toss to coat with the lemon sauce. If the mixture seems dry, gradually add some of the reserved pasta water until you reach your desired consistency.
  • Remove the skillet from heat and mix in the chopped parsley and grated Parmesan cheese. Season with salt and pepper to taste, tossing everything together until well combined.
  • Serve immediately on individual plates, garnished with additional Parmesan cheese and a sprinkle of parsley if desired.

Notes

For a protein boost, add grilled chicken or shrimp to the pasta.
Adjust the amount of lemon juice to your taste; more juice provides a tangier flavor.
This dish can be served warm or at room temperature, making it great for meal prep.
