Ingredients
  

  • 4 cups chicken or vegetable broth
  • 1 cup pastina (tiny pasta)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium celery stalk, diced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste black pepper
  • for serving grated Parmesan cheese (optional)
  • for garnish fresh parsley, chopped (optional)

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables begin to soften.
  • Add the minced garlic and dried thyme. Cook for an additional 1-2 minutes, stirring frequently to prevent the garlic from burning.
  • Pour in the chicken or vegetable broth and bring to a boil. Once boiling, add the pastina. Cook according to package instructions, usually about 6-8 minutes, until the pasta is tender.
  • Season the soup with salt and black pepper to taste. Stir well.
  • Remove from heat and let the soup sit for a couple of minutes before serving.
  • Serve the soup hot in bowls, garnished with grated Parmesan cheese and fresh parsley if desired.

Notes

Feel free to customize this soup by adding vegetables like spinach or peas for added nutrition.
For a creamier soup, you can stir in a splash of cream or milk before serving.
If you want to store leftover soup, keep the pasta separate from the broth to prevent it from becoming mushy.
