- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 cup fresh pineapple chunks
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced for garnish
- salt and pepper to taste
Start by preparing all your ingredients. Slice the chicken and vegetables, and have your pineapple chunks ready.
In a small bowl, mix the soy sauce, honey, cornstarch, and water. Stir until the cornstarch is dissolved and set aside.
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add the sliced chicken to the pan and season with salt and pepper. Stir-fry for about 3-4 minutes or until the chicken is cooked through and lightly browned.
Add the minced garlic, bell pepper, snap peas, and pineapple chunks to the pan. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.
Pour the soy sauce mixture over the chicken and vegetables. Stir well to coat everything evenly and cook for another minute until the sauce thickens.
Remove from heat and garnish with sliced green onions.
Serve immediately over rice or noodles, if desired.
You can substitute the chicken with shrimp or tofu for a different protein option.
Feel free to add additional vegetables such as broccoli or carrots based on your preference.
For extra heat, consider adding a pinch of red pepper flakes when stir-frying.
