Ingredients
  

  • 1 cup crushed pineapple drained well
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or nuts of choice
  • 1 cup shredded coconut sweetened
  • ½ cup mini chocolate chips optional for garnish

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, crushed pineapple, powdered sugar, and vanilla extract. Use an electric mixer or whisk until the mixture is smooth and well blended.
  • Gradually fold in the chopped pecans and shredded coconut into the mixture until evenly distributed.
  • Using a spoon, scoop out portions of the mixture and form them into balls about 1 inch in diameter. You can wet your hands slightly to prevent sticking.
  • Roll each ball in additional shredded coconut or chopped pecans to coat, if desired.
  • Place the Pineapple Balls onto a plate and cover them with plastic wrap. Refrigerate for at least 1 hour to set.
  • If using mini chocolate chips for garnish, you can press a few into the top of each ball just before serving.
  • Serve chilled and enjoy!

Notes

For an extra festive touch, consider drizzling melted chocolate over the balls before serving.
These treats can be made ahead of time and stored in the refrigerator for up to one week.
Adjust the sweetness by varying the amount of powdered sugar according to your taste preference.
