- 2 cups shredded sharp cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 cup finely chopped jalapeños About 3 medium jalapeños.
- ½ cup almond flour
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the shredded sharp cheddar cheese, shredded pepper jack cheese, finely chopped jalapeños, almond flour, garlic powder, onion powder, sea salt, and black pepper. Mix well until all ingredients are fully incorporated.
Using a spoon or cookie scoop, portion out the cheese mixture onto the prepared baking sheet, spacing them about 2 inches apart since they will spread while baking.
Flatten each portion slightly with the back of the spoon to form small discs.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and crispy.

For less spice, you can remove the seeds from the jalapeños before chopping.
