Ingredients
  

  • 1 pound breakfast sausage (pork or turkey)
  • 4 medium-sized potatoes, diced (about 1.5 pounds or 680 g)
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions
 

  • Heat the skillet over medium heat and add the olive oil.
  • Once the oil is hot, add the breakfast sausage. Cook until browned and fully cooked, breaking it up into bite-sized pieces, approximately 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan.
  • In the same skillet, add the diced potatoes. Season with salt, pepper, garlic powder, and paprika. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and tender.
  • Add the chopped onions and bell pepper to the skillet with the potatoes. Cook for an additional 5-7 minutes, until the vegetables are soft.
  • Return the cooked sausage to the skillet and stir everything together. Allow it to cook for another 2-3 minutes to heat through and combine the flavors.
  • Remove from heat, garnish with fresh parsley, and serve hot.

Notes

You can customize this dish by adding other vegetables like zucchini, mushrooms, or spinach.
For a spicier kick, consider using spicy sausage or adding red pepper flakes.
