- 1 pound breakfast sausage (pork or turkey)
- 4 medium-sized potatoes, diced (about 1.5 pounds or 680 g)
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- to taste salt
- to taste pepper
- for garnish fresh parsley, chopped
Heat the skillet over medium heat and add the olive oil.
Once the oil is hot, add the breakfast sausage. Cook until browned and fully cooked, breaking it up into bite-sized pieces, approximately 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the rendered fat in the pan.
In the same skillet, add the diced potatoes. Season with salt, pepper, garlic powder, and paprika. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and tender.
Add the chopped onions and bell pepper to the skillet with the potatoes. Cook for an additional 5-7 minutes, until the vegetables are soft.
Return the cooked sausage to the skillet and stir everything together. Allow it to cook for another 2-3 minutes to heat through and combine the flavors.
Remove from heat, garnish with fresh parsley, and serve hot.
You can customize this dish by adding other vegetables like zucchini, mushrooms, or spinach.
For a spicier kick, consider using spicy sausage or adding red pepper flakes.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or in the microwave.
