Ingredients
  

  • 1 cup Arborio rice or any short-grain rice
  • 4 cups whole milk
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg optional

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch. This helps to keep the pudding creamy.
  • In a medium saucepan, combine the rinsed rice and 4 cups of milk. Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent sticking.
  • Once boiling, reduce the heat to low and add the sugar, salt, vanilla extract, ground cinnamon, and nutmeg (if using). Stir to combine.
  • Cover the saucepan and cook for about 20-25 minutes, stirring occasionally. Cook until the rice is tender and the mixture has thickened to a creamy consistency.
  • Remove the saucepan from the heat. Let it cool slightly before serving.
  • Spoon the rice pudding into serving bowls. You can serve it warm or chilled. Top with raisins, whipped cream, or fresh fruit if desired.

Notes

For a creamier texture, you can substitute a portion of the milk with half-and-half or heavy cream.
Make sure to stir the pudding occasionally while it cooks to prevent it from sticking to the bottom of the pan.
Leftovers can be stored in the refrigerator for 2-3 days. Reheat gently on the stove or microwave, adding a splash of milk if necessary.
