  • 1 parchment paper optional
  • 1 mixing bowl
  • 1 measuring spoons
  • 1 tongs or spatula

Ingredients
  

  • 2 cups broccoli florets
  • 2 cups carrots, sliced About 4 medium carrots.
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary Optional.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the broccoli florets and sliced carrots.
  • Drizzle the olive oil over the vegetables and sprinkle the garlic powder, salt, pepper, and thyme or rosemary (if using) on top. Toss everything together until the vegetables are well coated.
  • Line the baking sheet with parchment paper (optional). Spread the coated broccoli and carrots in a single layer on the baking sheet.
  • Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly crispy on the edges. Stir halfway through for even roasting.
  • Remove from the oven and serve immediately, or let cool slightly before serving.

Notes

You can add other vegetables such as bell peppers or zucchini to the mix for added flavor and nutrition.
Experiment with different herbs and spices to suit your taste.
This dish pairs well with roasted meats, grains, or can be used in salads.
