Ingredients
  

  • 1 lb breakfast sausage
  • 6 large eggs
  • 1 cup bell peppers, diced Mix of red and green.
  • 1 cup onion, diced
  • 1 cup baby spinach
  • 1 cup potato, diced Optional.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper
  • 2 tablespoon olive oil

Instructions
 

  • Heat the large skillet over medium heat and add the olive oil.
  • Once the oil is hot, add the breakfast sausage. Use a spatula to break it apart as it cooks, about 5-7 minutes or until browned.
  • If using diced potatoes, add them to the skillet and cook for an additional 5 minutes, or until they are golden and crispy.
  • Add the diced onion and bell peppers to the skillet. Sauté for 3-4 minutes until they are softened.
  • While the vegetables are cooking, crack the eggs into a mixing bowl. Add garlic powder, onion powder, salt, and pepper. Whisk until well combined.
  • Pour the egg mixture over the sausage and vegetable mixture in the skillet. Stir gently to combine all ingredients.
  • Add the baby spinach and cook for another 3-5 minutes until the eggs are set and the spinach is wilted.
  • Taste and adjust seasoning if necessary. Serve hot straight from the skillet.
