Ingredients
  

  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium carrots, sliced
  • 2 cups spinach (about 60 g)
  • 1 package potato gnocchi (16 oz or about 450 g)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • Grated Parmesan cheese for serving (optional)

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and sliced carrots, cooking for an additional 2-3 minutes until fragrant.
  • Remove the sausage from its casing and crumble it into the pot. Cook until browned, about 5-7 minutes, stirring occasionally.
  • Pour in the chicken broth and bring to a simmer. Stir in the dried Italian herbs, salt, and pepper.
  • Once the soup is simmering, add the gnocchi and cook according to package instructions, usually about 3-5 minutes.
  • Just before serving, stir in the spinach and allow it to wilt for about 1-2 minutes.
  • Taste the soup and adjust seasoning if necessary. Ladle the soup into bowls and serve with optional grated Parmesan cheese on top.

Notes

For added richness, you can include a splash of heavy cream at the end.
Feel free to use turkey sausage or a plant-based sausage alternative for a lighter option.
You can substitute the spinach with kale or other leafy greens if desired.
