- 1 pound Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 medium carrots, sliced
- 2 cups spinach (about 60 g)
- 1 package potato gnocchi (16 oz or about 450 g)
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)

- 1 tablespoon olive oil
- Grated Parmesan cheese for serving (optional)
Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic and sliced carrots, cooking for an additional 2-3 minutes until fragrant.
Remove the sausage from its casing and crumble it into the pot. Cook until browned, about 5-7 minutes, stirring occasionally.
Pour in the chicken broth and bring to a simmer. Stir in the dried Italian herbs, salt, and pepper.
Once the soup is simmering, add the gnocchi and cook according to package instructions, usually about 3-5 minutes.
Just before serving, stir in the spinach and allow it to wilt for about 1-2 minutes.
Taste the soup and adjust seasoning if necessary. Ladle the soup into bowls and serve with optional grated Parmesan cheese on top.
For added richness, you can include a splash of heavy cream at the end.
Feel free to use turkey sausage or a plant-based sausage alternative for a lighter option.
You can substitute the spinach with kale or other leafy greens if desired.
