Ingredients
  

  • 1 lb Italian sausage (sweet or spicy)
  • 2 cups bell peppers (chopped, mixed colors)
  • 1 cup red onion (sliced)
  • 2 cups zucchini (sliced)
  • 2 cups broccoli florets
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons dried Italian herbs (oregano, basil)
  • to taste none salt
  • to taste none pepper
  • optional none fresh parsley for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the chopped bell peppers, sliced red onion, zucchini, and broccoli florets.
  • Slice the Italian sausage into rounds and add it to the bowl with the vegetables.
  • Drizzle the olive oil over the sausage and vegetables. Sprinkle with garlic powder, dried Italian herbs, salt, and pepper. Toss everything together until well coated.
  • Spread the mixture evenly on the sheet pan in a single layer.
  • Bake in the preheated oven for 25 minutes, or until the sausage is cooked through and the vegetables are tender and slightly charred. Stir halfway through to ensure even cooking.
  • Remove from the oven and let it cool for a few minutes. If desired, garnish with fresh parsley before serving.
