Ingredients
  

  • 1.5 pounds sirloin steak Season with olive oil and spices before cooking.
  • 1 pound baby potatoes Halved before seasoning.
  • 1 pound asparagus Trimmed before roasting.
  • 2 tablespoons olive oil Used for seasoning potatoes and asparagus.
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon black pepper For seasoning the potatoes.
  • to taste fresh parsley Chopped, for garnish.

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, combine the baby potatoes with half of the olive oil, 1 teaspoon of garlic powder, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Toss to coat the potatoes evenly.
  • Spread the seasoned potatoes in a single layer on one side of a large sheet pan. Bake in the oven for 10 minutes.
  • While the potatoes are baking, season the sirloin steak with the remaining olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • After the potatoes have baked for 10 minutes, remove the sheet pan from the oven and push the potatoes to one side. Place the seasoned steak on the other side of the sheet pan.
  • Spread the trimmed asparagus on the same side as the steak and drizzle with a little olive oil, salt, and pepper. Toss to coat.
  • Return the sheet pan to the oven and roast for an additional 10-15 minutes, or until the steak reaches your preferred doneness.
  • Once cooked, remove the sheet pan from the oven and let the steak rest for about 5 minutes before slicing.
  • Garnish with fresh parsley and serve the steak with the roasted potatoes and asparagus.

Notes

Feel free to substitute the vegetables with your favorites, such as bell peppers or broccoli.
If you prefer a more flavorful steak, marinate it for a few hours before cooking.
Be cautious with the cooking times if you use different cuts of steak or thicker vegetables. Adjust accordingly.
