Ingredients
  

  • 1 pound large shrimp, peeled and deveined
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes) You can customize based on your preference.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Lemon wedges for serving

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine the shrimp, mixed vegetables, olive oil, minced garlic, paprika, Italian seasoning, salt, and pepper. Toss until everything is well coated.
  • Tear off four large sheets of aluminum foil, approximately 12 inches long.
  • Divide the shrimp and vegetable mixture evenly among the four sheets, placing them in the center of each sheet.
  • Gather the edges of the foil and fold them over to create a sealed packet. Make sure it is tightly sealed to prevent any steam from escaping.
  • Place the packets on a baking sheet and bake in the preheated oven for about 20 minutes or until the shrimp are cooked through and the vegetables are tender.
  • Carefully open the foil packets (beware of steam) and serve with lemon wedges on the side.

Notes

You can customize the vegetables based on your preference or what you have on hand.
For extra flavor, consider adding spices like red pepper flakes or a squeeze of fresh lemon juice before serving.
