Ingredients
  

  • 1 pound ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables optional
  • 1 package (32 oz) frozen tater tots
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
  • Add onion powder, garlic powder, salt, and pepper to the beef, and mix well.
  • In a mixing bowl, combine the cooked beef with the cream of mushroom soup, shredded cheddar cheese, and frozen mixed vegetables (if using). Stir until well combined.
  • Transfer the mixture to a greased casserole dish and spread evenly.
  • Top the beef mixture with an even layer of frozen tater tots.
  • Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it cool slightly before serving.

Notes

For an extra kick, feel free to add chopped jalapeños or hot sauce to the meat mixture.
This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
