  • 1 tablespoon chili powder
  • ½ tablespoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • teaspoon cayenne pepper
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 2 yellow onions small
  • 3 bell peppers any color
  • 1 lb chicken breast
  • 2 tablespoon cooking oil
  • 1 lime
  • 8 6-inch tortillas
  • ½ cup sour cream optional
  • ¼ bunch cilantro optional

  • Preheat oven to 400°F (200°C).
  • Slice onions and bell peppers into thin strips.
  • Add sliced veggies to sheet pan.
  • Mix chili powder, paprika, onion powder, garlic powder, cumin, cayenne, sugar, and salt in a bowl.
  • Sprinkle spice mix over veggies and toss to coat.
  • Slice chicken breast, add to sheet pan, and toss with veggies and seasoning.
  • Spread mixture into an even layer to ensure roasting.
  • Bake 25-30 minutes, stir halfway, until chicken is cooked and veggies tender.

Notes

Top with fresh lime, sour cream, and cilantro for extra flavor. Store leftovers or freeze in portions to make future meals easy.
