Slow Cooker Balsamic Chicken is an easy, flavorful weeknight dinner made with tender chicken breasts simmered in tangy balsamic, tomatoes, and herbs for a deliciously juicy result.
Place chicken breasts at the bottom of the slow cooker in a single layer.
Sprinkle Italian seasoning, garlic powder, salt, and black pepper over the chicken.
Layer sliced onions over the chicken.
Add drained diced tomatoes on top of the onions.
Pour balsamic vinegar and chicken broth evenly over everything.
Cover and cook on low for 6-7 hours or high for 3-4 hours.
Shred chicken in the slow cooker and stir to mix with juices. Garnish with chopped parsley before serving.

Serve over brown rice, quinoa, couscous, polenta or with crusty bread. Store leftovers in a sealed container in refrigerator for up to 4 days or freeze for future use.
