  • 2 ½ lbs boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 medium onion thinly sliced
  • 1 can (14.5 oz.) diced tomatoes drained
  • ½ cup balsamic vinegar
  • ½ cup low-sodium chicken broth
  • fresh parsley chopped, for garnish

  • Place chicken breasts at the bottom of the slow cooker in a single layer.
  • Sprinkle Italian seasoning, garlic powder, salt, and black pepper over the chicken.
  • Layer sliced onions over the chicken.
  • Add drained diced tomatoes on top of the onions.
  • Pour balsamic vinegar and chicken broth evenly over everything.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Shred chicken in the slow cooker and stir to mix with juices. Garnish with chopped parsley before serving.

Notes

Serve over brown rice, quinoa, couscous, polenta or with crusty bread. Store leftovers in a sealed container in refrigerator for up to 4 days or freeze for future use.
