  • 1.5 lbs Andouille or smoked sausage sliced
  • 1 Yellow onion finely chopped
  • 4 cloves Garlic minced
  • 3 tablespoon Cajun seasoning like Old Bay
  • 2 tablespoon Extra virgin olive oil
  • 30 oz Frozen shredded hash browns
  • 6 cups Low-sodium chicken broth
  • 10.75 oz Cream of chicken soup canned
  • 8 oz Cream cheese room temperature
  • 1 cup Sharp cheddar cheese grated, plus more for topping
  • Kosher salt and pepper to taste
  • Green onion optional for garnish

  • Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and sliced sausage. Cook until sausage is browned, 5–7 minutes.
  • Transfer sausage mixture to slow cooker. Add hash browns, Cajun seasoning, broth, and cream of chicken soup. Stir to combine.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender.
  • Thirty minutes before serving, stir in the cream cheese and cheddar until melted.
  • Cover and cook another 30 minutes. Stir again before serving. Garnish with extra cheese and green onions if desired.

Notes

For creamier texture, let the soup sit 10 minutes after cooking and stir before serving. Great leftovers!
