  • 3 pounds boneless skinless chicken breasts
  • 1 cup chopped onion
  • 2 tablespoons butter
  • ¼ cup all purpose flour
  • 2 cups pineapple juice
  • ½ cup brown sugar
  • ¾ cup ketchup
  • 1 tablespoon soy sauce
  • 4 cloves garlic minced
  • 1 ½ teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • ½ teaspoon ground ginger

  • Place the chicken breasts into the slow cooker.
  • Melt butter in a medium saucepan over medium heat. Add chopped onions and cook until translucent, about 3–4 minutes.
  • Add minced garlic and cook for 30 seconds more.
  • Sprinkle in flour and stir constantly for 1 minute to form a roux.
  • Whisk in pineapple juice, then add brown sugar, ketchup, soy sauce, and Worcestershire sauce. Simmer for 10–15 minutes until thickened.
  • Pour sauce over chicken in slow cooker. Cover and cook on low 8 hours or on high 3–4 hours.
  • Shred chicken with forks and stir to combine with sauce.

Notes

Serve on sandwich rolls, over rice, or your favorite salad. Sauce thickens as it cools. Store leftovers in refrigerator for up to 4 days or freeze for up to 3 months.
