  • 2 tablespoons Olive oil divided
  • 1.5 to 2 pounds Boneless skinless chicken breasts cut into bite-sized pieces
  • cup Cornstarch
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Orange marmalade
  • ¼ cup Low-sodium soy sauce
  • 1 tablespoon Rice wine vinegar
  • 1 teaspoon Sesame oil
  • 1 teaspoon Ground ginger or to taste
  • ½ teaspoon Garlic powder or 2 garlic cloves, finely minced
  • 2 tablespoons Sesame seeds toasted, for garnish
  • 2 tablespoons Green onions sliced thin
  • Orange slices optional for garnish

Instructions

  • Toss chicken pieces with cornstarch, salt, and pepper until evenly coated.
  • Heat 1 tablespoon olive oil in a skillet and sear half of the chicken for 3–4 minutes until golden. Repeat with remaining chicken and oil.
  • Transfer seared chicken to slow cooker.
  • In a bowl, whisk together orange marmalade, soy sauce, rice wine vinegar, sesame oil, ginger and garlic until blended.
  • Pour sauce over chicken in slow cooker and stir gently to coat.
  • Cover and cook on low for 4 hours or high for 2 hours. Stir, garnish with sesame seeds and green onions, and serve hot.

Notes

For best results, garnish with fresh green onions and sesame seeds. Serve with rice or stir-fried vegetables.
