Ingredients
  

  • 1 pound smoked sausage Sliced into ΒΌ-inch rounds.
  • 1 pound baby potatoes Halved.
  • 1 each red bell pepper Chopped.
  • 1 each yellow bell pepper Chopped.
  • 1 medium onion Chopped.
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • optional fresh parsley For garnish.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced smoked sausage to the skillet and cook for about 5 minutes, stirring occasionally until it begins to brown.
  • Add the halved baby potatoes to the skillet. Stir well to combine with the sausage and cook for about 10 minutes, stirring occasionally.
  • Add the chopped onion and both bell peppers to the skillet. Sprinkle with garlic powder, paprika, salt, and pepper. Stir well to evenly distribute the seasonings.
  • Continue to cook for an additional 10-15 minutes, or until the potatoes are fork-tender and the vegetables are softened, stirring occasionally.
  • Taste and adjust seasonings if needed. Remove from heat.
  • Garnish with fresh parsley if desired. Serve hot.

Notes

For added flavor, you can include other vegetables such as zucchini or corn.
This dish is versatile; feel free to substitute turkey or chicken sausage for a lighter option.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving.
