Spiced Sweet Potato and Black Bean Stew

- 2 medium sweet potatoes, peeled and diced About 500g.
- 1 can (400g) black beans, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper chopped (red or green)
- 1 can (400g) diced tomatoes With juice.
- 2 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon salt Adjust to taste.
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- to taste fresh cilantro for garnish Optional.
Heat the olive oil in a large pot over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened.
Add the minced garlic and cook for another minute until fragrant, stirring frequently to prevent burning.
Stir in the diced sweet potatoes, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 2 minutes, allowing the spices to toast slightly.
Add the can of diced tomatoes (with juice) and the vegetable broth. Stir well to combine all ingredients.
Bring the mixture to a boil, then reduce heat to low and cover the pot. Let it simmer for about 15 minutes, or until the sweet potatoes are tender.
Add the black beans to the pot and stir gently. Allow the stew to cook for an additional 5 minutes to heat the beans through.
Taste and adjust seasonings as needed. You can add more salt, pepper, or spices to balance the flavors.
Serve hot, garnished with fresh cilantro if desired.
This stew can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for up to 3 months.
Feel free to add additional vegetables such as carrots or corn for more variety.
For a spicier kick, increase the amount of chili powder or add some diced jalapeños.
