1 measuring spoons
1 colander
- 1 cup orzo pasta uncooked
- 2 tablespoons olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 8 ounces mushrooms sliced
- 4 cups fresh spinach
- 1 teaspoon dried oregano
- to taste salt
- to taste pepper
- ½ cup vegetable broth
- ½ cup heavy cream or dairy-free substitute
- ¼ cup grated Parmesan cheese optional
- fresh parsley for garnish, optional
In a large saucepan, bring salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside.
In a skillet over medium heat, heat olive oil. Add diced onion and sauté for about 3-4 minutes until translucent.
Stir in minced garlic and sliced mushrooms. Cook for another 5-6 minutes until mushrooms are tender and have released their moisture.
Add fresh spinach and dried oregano to the skillet. Cook until the spinach wilts, about 2 minutes. Season with salt and pepper to taste.
Pour in the vegetable broth and heavy cream, stirring to combine. Let the mixture simmer for 3-4 minutes until slightly thickened.
Add the cooked orzo to the skillet and toss to coat the pasta in the creamy mixture. Stir in Parmesan cheese if desired.
Portion the orzo into bowls and garnish with fresh parsley if desired. Enjoy warm!
For a lighter version, you can substitute the heavy cream with Greek yogurt or a dairy-free alternative.
This dish can be made ahead of time and reheats well, making it ideal for meal prep.
Feel free to add protein, such as grilled chicken or shrimp, for an even heartier dish.
